Yesterday I blogged here about grilling enough lemon pepper chicken to make several meals. Once your chicken is grilled, this dish is so simple you’ll be in and out of the kitchen in record time.
Lemon Pepper Chicken Tex-Mex Style
4-5 chicken breast tenders, grilled w/ lemon pepper
1 can black beans
1 cup chunky style salsa
1/2 c. shredded cheddar cheese
Yellow corn chips
Mix one can of black beans and with one cup of chunky style salsa (I use Ro-Tel ® diced tomatoes and green chilies) in a sauce pan over med-lo heat. While the bean and salsa mixture is heating, slice 4-5 chicken breast tenders into 1/4 inch pieces. Put the chicken in a microwave safe dish, cover, and heat 1-2 minutes (or until heated through). Combine chicken and black bean/salsa mixture in a serving dish, garnish with shredded cheddar cheese. Serve with yellow corn chips.
